Penfolds Bin 707 Cabernet Sauvignon is the definitive Cabernet expression of the Penfolds House Style — often referred to as the ‘Grange of Cabernet’ for its near-identical winemaking approach and exclusive use of 100% new American oak. First vintaged in 1964, Bin 707 has only been produced in years when fruit of the required style and quality is available, making each release a genuine statement of intent. The 2023 vintage draws on Cabernet Sauvignon from McLaren Vale, Padthaway, and Barossa Valley, matured for 18 months in 100% new American oak hogsheads. Full-bodied, intensely flavoured, and built for the long term, Bin 707 retains a secure place among Australia’s finest Cabernets. Peak drinking 2026–2050.

Appearance

Deep, dark magenta on the rim with a black core — brooding, concentrated, and commanding in the glass.

Aroma

Unmistakably Bin 707. Black olive tapenade and tobacco pouch provide varietal grounding, whilst Copha, dusty chocolate, and barrel-ferment pralines speak to the Penfolds winemaking signature. Dry-aged beef and pan juices add savoury depth, before soaked dark cherry, fruit cake, rhubarb, and Black Forest cake attest to the variety. Freshly ground cinnamon — sprinkled over Portuguese custard tart — adds a final flourish of exotic complexity.

Palate

Not overtly fruit-dependent, though blackberry and mulberry are instantly detected. The palate leans savoury and earthy — pan juices, black olive, and exotic African and Moroccan spices of turmeric, bay leaf, and pimento weave throughout. Dark chocolate crackle and barrel-ferment praline add richness and nuttiness, whilst an expansive, woven texture conveys vinous deliciousness with positive tension. Seamless Cabernet tannins — at once granular and sleek — provide a structure that is both sophisticated and complex. Masterfully conjured.

Pairs With

Dry-aged ribeye, slow-roasted lamb shoulder, venison, aged hard cheeses, and dark chocolate. A wine that demands a worthy occasion and the patience to let it breathe.

Vintage Conditions

The 2023 growing season across McLaren Vale, Padthaway, and Barossa Valley presented a series of climatic challenges that ultimately delivered Cabernet Sauvignon of exceptional character. In McLaren Vale, a wet spring with cooler temperatures and hail impacted flowering and fruit set, reducing yields. A return to warmer, drier summer conditions allowed the vines to regain balance, and a delayed but cool harvest produced small bunches and berries of concentrated flavour and ripe tannins. Padthaway experienced above-average early rainfall and a cooler, cloudier spring that slowed vine development, before a mid-level December heatwave gave way to a cooler overall growing season. The region avoided significant heat spikes during an orderly harvest, yielding exceptional parcels of Cabernet Sauvignon. In the Barossa Valley, near-average winter rainfall and a drier spring were followed by a cooler-than-average growing season punctuated by flash floods and thunderstorms, requiring careful disease management. Nevertheless, a moderately warm harvest with beneficial diurnal temperature swings delivered better-than-expected yields and high-quality fruit — Cabernet Sauvignon in particular exhibiting distinctive and compelling varietal characteristics.
