The Art of Grappa Production

Grappa is Italy's signature pomace brandy, produced exclusively from vinacciaβ€”the solid remains of grapes after pressing for wine. This ancient practice, dating back to the Middle Ages, originated in northern Italy as a way to utilise every part of the grape harvest. Modern grappa production employs either traditional copper pot stills or continuous column stills, with the finest examples using discontinuous distillation methods that preserve the aromatic qualities of the grape varieties.

The pomace is distilled shortly after wine pressing whilst still moist and aromatic, capturing the essential character of the grape varieties. Master distillers carefully control temperature and distillation speed to extract delicate aromatics whilst avoiding harsh flavours, resulting in spirits that can range from 37.5% to 60% alcohol by volume.

Our collection features grappas from Italy's renowned distilling regions, particularly the Veneto and Friuli-Venezia Giulia in northeastern Italy, where grappa production has been perfected over generations. The Veneto region, home to prestigious wine areas including Valpolicella and the Piave River valley, produces grappas from noble grape varieties including Amarone pomace, which yields particularly aromatic and complex spirits.

The alpine foothills and pre-Alpine zones of northern Italy provide ideal conditions for both viticulture and distillation. Cool temperatures, significant diurnal temperature variation, and diverse soil typesβ€”from alluvial plains to limestone hillsidesβ€”produce wine grapes with concentrated aromatics that translate beautifully into grappa. The region's pure mountain water sources and centuries-old distilling expertise contribute to the exceptional quality of these spirits.

Grappa Styles

- Grappa Giovane (Young Grappa): Unaged, crystal-clear spirits bottled immediately after distillation, showcasing pure grape aromatics with fresh, vibrant character
- Grappa Affinata (Rested Grappa): Aged briefly in wood or stainless steel, developing subtle complexity whilst maintaining freshness
- Grappa Invecchiata/Stravecchia (Aged Grappa): Barrel-aged expressions spending months to years in oak, cherry, or acacia casks, developing amber colour and complex flavours of vanilla, spice, dried fruit, and wood
- Single-Variety Grappa: Made from specific grape varieties, highlighting the unique aromatic profile of each cultivar

Tasting Profile & Serving

Young grappas display floral and fruity aromatics with clean, intense grape character and a warming, smooth finish. Aged grappas offer amber to golden colour, complex aromas of vanilla, caramel, dried fruit, spice, and toasted wood, with a velvety texture and long, sophisticated finish.

Grappa is traditionally served at room temperature or slightly chilled (8-10°C for young grappa, 15-17°C for aged) in tulip-shaped glasses that concentrate aromatics. It's enjoyed as a digestivo after meals, added to espresso for caffè corretto, or savoured neat as a contemplative spirit.
