Cognac is the pinnacle of the brandy world — a spirit of extraordinary complexity, heritage, and craftsmanship, produced exclusively in the Cognac region of southwestern France. The Region: Cognac, Charente, France

The Cognac appellation is located in the Charente and Charente-Maritime départements of southwestern France, centred on the town of Cognac on the banks of the River Charente. It is one of the most strictly regulated spirit appellations in the world — only brandy produced within this defined geographical area, from authorised grape varieties, and aged in French oak may legally be called Cognac.

The region's climate is oceanic and temperate, moderated by the Atlantic Ocean to the west. Summers are warm and sunny, providing ideal conditions for ripening the high-acid, low-alcohol base wines that are essential for great Cognac. The proximity to the Atlantic also brings the humidity that encourages the slow, gentle evaporation known as the part des anges (the angels' share) during ageing — a process that softens and concentrates the spirit over time.

The Cognac region is divided into six crus — growing areas defined by their soil types — each producing eaux-de-vie of distinct character. Grande Champagne and Petite Champagne, with their deep chalky limestone soils, are the most prized, producing the most delicate, floral, and age-worthy spirits. Borderies is the smallest cru, celebrated for its violet and nutty character. Fins Bois, Bons Bois, and Bois Ordinaires produce fruitier, more approachable styles that mature more quickly.

Grape Varieties & Production

Cognac is distilled from wine made predominantly from Ugni Blanc (known locally as Saint-Émilion), a high-acid, low-alcohol grape that produces a thin, tart base wine — ideal for distillation. The wine is double-distilled in traditional copper pot stills (alembics charentais) to produce a clear, raw eau-de-vie of around 70% ABV, which is then diluted and aged in French Limousin or Tronçais oak barrels. It is during this ageing process — which may last anywhere from two years to several decades — that Cognac develops its characteristic amber colour, complexity, and depth.

Cognac Classifications

VS (Very Special) — The youngest classification, aged for a minimum of two years in oak. VS Cognacs are vibrant, fruit-forward, and approachable — ideal for cocktails or as an introduction to the category.

VSOP (Very Superior Old Pale) — Aged for a minimum of four years. VSOP expressions offer greater complexity and refinement, with harmonious fruit, spice, and oak integration. Excellent neat, over ice, or in premium long drinks.

XO (Extra Old) — The pinnacle of the classification system, aged for a minimum of ten years. XO Cognacs are rich, profound, and deeply complex — spirits to be savoured slowly and appreciated in full.

Hennessy — The world's largest and most recognised Cognac house, founded in 1765 by Irish officer Richard Hennessy in Cognac. Hennessy accounts for nearly half of all Cognac sold globally and has been instrumental in defining the category's international reputation.

Rémy Martin — Founded in 1724, Rémy Martin is unique among the great Cognac houses in its exclusive focus on Fine Champagne — a blend of Grande and Petite Champagne eaux-de-vie — the most prestigious designation in the appellation.

Martell — The oldest of the great Cognac houses, founded in 1715 by Jean Martell, a Jersey-born merchant who settled in Cognac. Martell is celebrated for its distinctive house style — lighter, more floral, and more delicate than many of its peers — and for its pioneering use of Tronçais oak.
