Appearance

Brilliant pale straw with a very fine bead of persistent, gentle bubbles that dance elegantly in the glass.

Aroma

The bouquet is delicate and complex, revealing characteristics of cracked yeast and freshly baked apple strudel, complemented by bright notes of lime that add a refreshing citrus dimension.

Palate

Upon tasting, there is a lovely fine mousse in the mouth with lemon sherbet and apple notes on the front palate, followed by a fresh, creamy mid-palate, then a zippy acid and crisp finish. Plenty of length and beautifully balanced, this is a young and fresh vibrant wine that showcases the hallmark quality of Blue Pyrenees Estate's sparkling wine programme.

Winemaking Notes

The production of méthode traditionnelle sparkling wines has been an integral part of the winemaking at Blue Pyrenees Estate for many years. In 1992, the team at Blue Pyrenees first experimented with nighttime picking under lights to optimise both fruit condition and temperature. The night harvesting resulted in an amazing improvement—crisper base wines of outstanding quality with higher natural acidity—and the Midnight Cuvée was born. The 2023 Midnight Cuvée is a blend of the best Chardonnay parcels from the estate vineyards and hand-picked grapes from the ultra-cool Macedon Ranges, aged on yeast in bottle for 24 months.

The 2023 vintage in the Pyrenees region delivered exceptional conditions for sparkling wine production, with cool nights preserving natural acidity and extended ripening periods allowing the Chardonnay to develop complex flavour profiles whilst maintaining freshness.
