Coldstream Hills has been making sparkling wine since 1995, and this Pinot Noir Chardonnay is the estate’s most decorated expression of the style. The 2018 vintage spent upwards of six years on yeast lees following traditional secondary fermentation in the bottle — a commitment to time that shows in every aspect of the wine.

Fruit was sourced from the south-facing slopes of the Deer Farm Vineyard at Gladysdale, hand-picked and gently pressed prior to fermentation. Blend: Pinot Noir 57%, Chardonnay 43%. Dosage: 5.75g/L.

Tasting Notes

Appearance: Pale straw with a bright green gold hue. Tiny and persistent bead.

Nose: Fine and complex with fragrant lemon blossom Chardonnay aromas and Pinot Noir savouriness. Attractive secondary notes of breadcrust and toast have evolved from extended time on lees. Freshly baked bread with white peach and orange peel.

Palate: Lovely fine bead and expansive mousse give rise to notes of preserved lemon, nougat, and underlying nuances of toast and breadcrust. Dry and impeccably balanced, finishing long, vibrant and chalky.

The winemaker has reduced dosage levels in recent years, allowing a lovely purity to be expressed.”

A cool start to the growing season was overshadowed by a warm and humid late spring. Dry conditions prevailed throughout the summer months with gloriously warm days and cool nights. A relatively early start to the season, which was fortunately tempered by an even period of sugar and flavour development.
