Tasting Notes

Appearance

Pale straw with a delicate green hue and brilliant clarity — the hallmark of cool-climate Marlborough Sauvignon Blanc from the Southern Valleys and central Wairau Plains.

Aroma

Beautifully aromatic and immediately inviting. Orange blossom, sweet herbs and ripe tangelo — expressive, scented and precise.

Palate

Bright and fresh with juicy citrus, crushed oyster shell and ripe botanicals. Crisp, fresh structure with ripe fruit and the restraint that defines Catalina Sounds. A classic Marlborough style.

Winemaking

Individual blocks harvested by machine over four weeks from 13 March. Fruit gently pressed over 2.5 hours and cold settled. Clear juice racked after 2–3 days and fermented in stainless steel with selected yeast. A small portion fermented in older large-format oak, mostly with indigenous yeast. Components left on lees without SO₂ as long as possible, blended late June, bottled July. Vegan friendly.

Vineyard

100% Sauvignon Blanc from Marlborough, New Zealand — certified Appellation Marlborough Wine. Fruit sourced from estate and grower vineyards across the Southern Valleys and central Wairau Plains. Southern Valleys soils range from older, denser clay loams to free-draining alluvial soils with river stones on the central Wairau Plain.

Vintage 2025

An enthusiastic early start — October and November unseasonably warm, reaching 30°C. December turned cool, grey and drizzly, slowing vine development and producing abundant yields across Marlborough. Fruit thinning was carried out across every block and every vine — owned and grower — to ensure ripening without disease pressure. Yield reduction paid dividends at blending, with superb balance across all components.
