A true reflection of provenance, this Pinot Gris is named in honour of Inigo of Loyola who was co-founder of the Jesuit Order whose members built Sevenhill.
Sevenhill cellars collaborated with a reputable grower of Adelaide Hills Pinot Gris, to supply them with this year’s wine. The wine was made off site in the Adelaide Hills, which allowed for better management of harvesting times and transport.
Winemaking 2023 once again saw us source our fruit from the Adelaide Hills and by extension do the winemaking off site. Once again, we used a portion of the juice pressing to be re incorporated into the final blend. This juice pressing was also quite cloudy before fermentation, increasing the texture gained from this portion. The free-run juice portion was fermented clean. No oak was used.
Vintage A prolonged winter cascaded into a mild summer and autumn, all of which meant late flowering , late and slower ripening. It was a vintage which presented a few challenges, but also one in which patience and nerve were rewarded, especially those blocks that were lower yielding or more suited to a cooler year.
