The Zonzo Estate Prosecco Di Aria was crafted with meticulous care, beginning with grape harvesting in early March. Grapes underwent a gentle pressing with minimal agitation to preserve delicate aromas. The free-run juice was chilled and settled for three days before being racked into a fresh tank to warm slightly. Aromatic yeast was introduced to initiate a carefully monitored, cool fermentation lasting two weeks. Following completion, the tank was gently warmed to finish fermentation. The wine then settled for seven days before being carefully racked off the lees, ensuring a clean and refined expression of the vintage.
