Scotchmans Hill Sauvignon Blanc 2025 is a lifted, fresh and intensely lively cool-climate Sauvignon Blanc from the Bellarine Peninsula, Victoria — guava, lychee, grapefruit and gooseberry on the nose, with a vibrant tropical fruit and gooseberry palate, savoury mid-palate notes and a tangy, mouth-watering finish. Crushed, de-stemmed and pressed to tank, fermented at 13°C for 14 days with extended lees contact of 4 months and 10% wild fermented in older French barriques for added complexity. Appearance

Scotchmans Hill Sauvignon Blanc 2025 presents a bright light straw with a fresh green tinge — the hallmark of a lifted, cool-climate Sauvignon Blanc from the Bellarine Peninsula’s self-mulching black vertosol basalt soils, fermented at 13°C with extended lees contact and 10% wild fermented in older French barriques. Vibrant and immediately inviting in the glass.

Aroma

Guava and lychee lead the aromatics with a lifted, fresh and exotic generosity — grapefruit adds a bright, zesty citrus vibrancy, while gooseberry delivers the classic cool-climate Sauvignon Blanc character with a crisp, herbaceous edge. The 10% wild fermentation in older French barriques adds a subtle, integrated complexity that elevates the aromatics with depth and refinement. A nose of genuine freshness, lift and Bellarine Peninsula cool-climate expression.

Palate

Intense and lively on the palate — tropical fruits and gooseberry lead with a vibrant, fresh energy, while savoury notes on the mid-palate add a satisfying complexity and depth that is immediately distinctive. Tangy acidity rounds out the wine beautifully, delivering a mouth-watering finish of genuine length and drive. The extended lees contact of 4 months and 10% wild fermentation in older French barriques contribute a subtle textural richness that adds complexity without masking the bright, varietal fruit character.

Winemaking Notes

Scotchmans Hill Sauvignon Blanc 2025 is sourced from the Bellarine Peninsula, Victoria — clone F4V6 planted on self-mulching black vertosol soils derived from tertiary basalt. Crushed, de-stemmed and pressed to tanks, fermented at 13°C for 14 days with extended lees contact of 4 months for texture and complexity. Ten per cent of the blend was fermented wild in older French barriques, adding a subtle, integrated complexity to the lifted, fresh varietal character. The result is a Sauvignon Blanc of genuine intensity, drive and cool-climate Bellarine Peninsula expression. 13% alc. 750ml. Bellarine Peninsula, Victoria, Australia.
