Winemaking Notes

Whole bunches of grapes are cooled and de-stemmed but not crushed, and dropped directly into two-tonne open fermenters — avoiding the need to pump must. After four to six days of cold maceration, primary wild yeast fermentation begins, taking approximately one week to complete with temperatures peaking at around 34°C. A further few days on skins brings total maceration to 19–21 days, after which the wine is pressed and transferred to barrel following a brief settling period. Natural malolactic fermentation occurs in the following spring. The wine is racked once when assembled for bottling — no fining, no filtration.

Vintage Conditions

The 2025 vintage on the Mornington Peninsula continued the region’s tradition of producing Pinot Noir of genuine finesse and site-specific character. Moorooduc Estate’s intensive, hands-on viticulture — with minimal chemical use and a commitment to expressing terroir — ensured that the fruit arriving at the winery was of the highest possible quality, allowing the wine’s natural character to shine through with minimal intervention from vineyard to bottle.
