Winemaking Notes

Chardonnay grapes were picked at optimal ripeness from the Relbia vineyard in early April 2023. The grapes were gently pressed and the juice clarified before fermenting in stainless steel tanks for 10 days. The wine matured 'sur lie' in tank for approximately two months, building texture and complexity. One barrel of wild-fermented Chardonnay with high levels of solids was added to the tank to add interest and offset the fruity nature of the wine. Following maturation, clarification and stabilisation processes took place, and the wine was bottled in early September 2023.

Vintage Conditions

'Pepik' is the traditional nickname given to those named Josef in the Czech Republic. The Pepik label represents the more informal range of wines from Josef Chromy, crafted for everyday drinking with friends and food. The 2023 vintage in Tasmania benefited from cool-climate conditions that allowed the Chardonnay grapes to develop concentrated flavours whilst retaining natural acidity, resulting in wines with excellent balance, freshness and textural complexity characteristic of premium Tasmanian Chardonnay.
