Domaine Christian Salmon has cultivated Sauvignon Blanc in the village of Bué, at the heart of Sancerre's most celebrated terroir, for six generations. Across 15 hectares of Sancerre AOC, the Salmon family works clay-limestone terres blanches and limestone-rich caillottes soils that define the appellation's signature mineral character.
Tasting Notes
Colour: Pale gold with delicate green highlights.
Nose: Intensely aromatic, with vivid freshness and fruit expression. Citrus and lime lead, with a fine mineral undercurrent and lifted finesse.
Palate: Bright and focused, with citrus fruit, lime zest and a characteristic touch of mint. Vivacity and minerality persist through to a clean, saline finish.
Terroir & Winemaking
Grapes are harvested from the clay-limestone slopes of Bué, where terres blanches and caillottes soils deliver both texture and precision. Vinification follows a long, gentle pneumatic pressing to capture the full aromatic spectrum of the Sauvignon Blanc fruit. The juice is settled in temperature-controlled vats before a carefully managed fermentation, with no oak treatment at any stage — preserving the purity and mineral drive that define this cuvée.
