Valdespino El Candado is one of the world’s great Pedro Ximénez Sherries — a wine of extraordinary richness, complexity, and history, born from two selected casks traditionally kept under lock and key as a family reserve before establishing its century-old solera. The name Candado — Spanish for ‘lock’ — tells that story in a single word. Made from 100% Pedro Ximénez grapes subjected to the traditional soleo sun-drying process, which concentrates the grapes into raisins before pressing and fermentation, El Candado then undergoes long, careful oxidative ageing in oak casks averaging over ten years. The result is an intensely seductive golden mahogany Sherry of remarkable depth — raisins, figs, and muscats on the nose, and a palate that is smooth, velvety, and endlessly complex. Serve at cellar temperature or slightly chilled.

Appearance

Intense, seductive golden mahogany with twilight hints — the deep, concentrated colour of a Pedro Ximénez Sherry aged for over a decade in oak, with the viscosity and richness that 420g/l of residual sugar and the soleo process deliver.

Aroma

Very elegant and deeply expressive — true raisins, figs, and muscats lead, with luscious sweet musty grapes and subtle notes of roasted coffee beans, mocha, and sweet liquorice weaving through a bouquet of extraordinary depth and complexity.

Palate

Remarkable, complex, rich, and velvety — smooth and silky, with the concentrated sweetness of sun-dried Pedro Ximénez grapes balanced by the oxidative complexity of over ten years in oak. The finish is long, rich, and deeply satisfying.

El Candado is produced from 100% Pedro Ximénez grapes subjected to the traditional soleo process — sun-dried on esparto grass mats until the grapes become raisins, concentrating sugars to extraordinary levels. After pressing and fermentation, the wine undergoes long, careful oxidative ageing in oak casks in a century-old solera, with an average age of over ten years. Bottled at 17% ABV with 420g/l residual sugar and 2.80g/l total acidity — one of the richest and most complex Pedro Ximénez Sherries produced in Jerez.

Producer History

Valdespino is one of the oldest and most treasured sherry bodegas in Jerez, with six centuries of sherry production behind them and a reputation for world-class quality across every style. One of the few bodegas to release single-vineyard wines, their Macharnudo holding is considered one of the grand crus of Jerez — situated at the highest altitude on the famous bright white Albariza chalk soils. Valdespino still ferments a proportion of their wines in wood, ages in solera far in excess of DO regulations, and produces everything from the savoury Fino Inocente and Manzanilla Deliciosa to the unctuous Solera 1842 and El Candado — a portfolio of extraordinary breadth and uncompromising quality.
