Winemaking Notes

Sourced from a combination of Heathcote vineyards, the fruit is crushed and de-stemmed into static fermenters and pumped over twice daily throughout fermentation, with temperature and acid levels monitored constantly to preserve the varietal character and aromatic integrity of the wine. After fermentation, the wine is pressed to tank using an air bag press, racked off gross lees, and transferred to a combination of new French and older oak barrels for maturation β€” a regime that delivers the refined tannin structure, mocha depth, and velvety palate that define this wine.
