Appearance

Deep rich garnet colour with bright purple-red highlights, reflecting excellent concentration and the wine's youthful vigour from one of Yarra Valley's most elevated vineyard sites.

Aroma

A captivating bouquet of ripe berry fruits, fresh mint and musk mingles with maraschino cherries and subtle hints of cedar. The aromatic complexity showcases the wine's careful winemaking and the distinctive character of Seville's rich red volcanic soils, creating an inviting and layered nose.

Palate

Rich and luscious flavours of ripe blackberry, coffee, chocolate and maraschino cherry cascade across the palate, perfectly framed by soft, integrated tannins. The wine displays full-bodied depth with loads of extract providing fleshy density and a sumptuous mouthfeel. Mulberry and blackcurrant notes add further complexity, whilst the balanced structure ensures both immediate enjoyment and excellent cellaring potential through to 2039.

Winemaking Notes

Established in 1991, Seville Hill Winery has been producing wines from one of the most elevated and cooler properties in Seville and the Yarra Valley. The site is also home to the rich red volcanic soil which is famous in the area. Initially focusing on producing elegant, fruit-driven, full-bodied red wines, over recent years the list now includes whites, dessert styles and sparkling wines. The involvement of John and Josie D'Aloisio in the agricultural industry began over 40 years ago producing a variety of stone fruit and strawberries. A history reflected by an orchard of cherry trees that still flowers beautifully to this day, the present reflected in the vineyard's earliest planting of wine varieties include Cabernet Sauvignon, Chardonnay, Shiraz, Merlot, and the future with addition of international varietals such as Nebbiolo, Sangiovese, Tempranillo and Barbera.

Vintage Conditions

Seville Hill boasts one of the most stunning and picturesque views of the Warburton Ranges and Yarra Valley that will take your breath away. The elevated, cooler climate site combined with the region's famous rich red volcanic soils creates ideal conditions for producing elegant, fruit-driven Cabernet Sauvignon with excellent structure and ageing potential. During the warmer months of the year, Summer Jazz at Seville Hill (October - April) is held outside on the terraced lawn and deck which is overshadowed by three very large spectacular English elm trees that are well over 180 years old and has become a popular feature event of the winery. The 2019 vintage has produced a wine that can be enjoyed now or will develop beautifully with long-term cellaring, showcasing the exceptional quality possible from this unique Yarra Valley site.
