Pale garnet colour with developing brick-red highlights, reflecting the wine's elegant evolution and the distinctive character of Nebbiolo from Yarra Valley's elevated, cooler climate vineyard sites.

Aroma

Captivating aromas of red cherries and currants mingle with hints of sage, whilst developing notes of dried rose petals and blood orange zest add complexity. Forest floor, white truffle and thyme provide earthy depth, layered over subtle cedar and tobacco nuances that showcase the wine's maturity and the rich red volcanic soils of Seville Hill.

Palate

The medium-bodied palate delivers flavours of sweet cherry lozenge and mocha, transitioning seamlessly to savoury amaro and ground coffee notes. Cedar and tobacco overtones add sophistication, whilst hints of truffle provide earthy complexity. Firm yet pliant tannins frame the wine beautifully, lingering on the finish with excellent persistence and balance, creating an elegant drinking experience that rewards patience in the glass.

Winemaking Notes

Established in 1991, Seville Hill Winery has been producing wines from one of the most elevated and cooler properties in Seville and the Yarra Valley. The site is also home to the rich red volcanic soil which is famous in the area. Initially focusing on producing elegant, fruit-driven, full-bodied red wines, over recent years the list now includes whites, dessert styles and sparkling wines. The involvement of John and Josie D'Aloisio in the agricultural industry began over 40 years ago producing a variety of stone fruit and strawberries. A history reflected by an orchard of cherry trees that still flowers beautifully to this day. The vineyard's plantings include traditional varieties such as Cabernet Sauvignon, Chardonnay, Shiraz and Merlot, alongside international varietals including Nebbiolo, Sangiovese, Tempranillo and Barbera, showcasing the site's versatility and the family's commitment to exploring diverse wine styles.

Vintage Conditions

Seville Hill boasts one of the most stunning and picturesque views of the Warburton Ranges and Yarra Valley that will take your breath away. The elevated, cooler climate site combined with the region's famous rich red volcanic soils creates ideal conditions for producing elegant Nebbiolo with excellent structure and complexity. The 2019 vintage has produced a wine that is entering its optimal drinking window, displaying beautiful development whilst retaining freshness and balance. During the warmer months of the year, Summer Jazz at Seville Hill (October - April) is held outside on the terraced lawn and deck which is overshadowed by three very large spectacular English elm trees that are well over 180 years old and has become a popular feature event of the winery. The family welcomes you to join them, be it for a tasting or wine event, to experience this unique Yarra Valley property.
