Midnight Dram is Imbue Distillery's first whisky-based liqueur — a deeply indulgent, darkly flavoured spirit made in Melbourne, Victoria, from American Bourbon-casked whisky combined with Victorian-grown pepitas and cacao husks. The result is something genuinely unusual: a full-bodied, velvety liqueur with the structure of good whisky and the character of dark chocolate-covered pumpkin seeds, the very idea that inspired it.

Tasting Notes

Velvety and full-bodied on the palate, Midnight Dram opens with roasted cacao at the forefront, followed by a deep nuttiness that speaks directly to the Victorian pepitas at its heart. Soft caramel runs through the mid-palate, supported by a gentle oaky warmth from the Bourbon-casked base. The finish is long, smooth and lightly bitter — the bitterness playing a deliberate role in keeping the sweetness in check and lending the liqueur real depth and sophistication.

Ingredients & Inspiration

Midnight Dram began with a single idea: dark chocolate-covered pumpkin seeds. From that starting point, Imbue built a liqueur around two carefully chosen Victorian ingredients. The pepitas come from Pepo Farm, a Victorian grower selected for the quality and character of their crop. The cacao husks — a by-product of chocolate-making — are sourced from Planet Cocoa, adding a roasted, slightly bitter cacao note that ties the liqueur together and anchors its flavour identity.

Serving

Midnight Dram is well suited to drinking neat, allowing its full character to develop in the glass.
