Cinnamon, star anise, cardamom, nutmeg, cloves, black pepper, and ginger weave together in a complex and deeply aromatic bouquet, with tea extract adding a subtle earthy depth and juniper providing a classic backbone beneath the spice. The wildflower honey adds a soft, floral sweetness that draws everything together.

60ml HM Seven Spice Chai Gin
30ml espresso
Cinnamon sugar to garnish

Add all ingredients to a cocktail shaker and dry shake for 20 seconds. Add ice and shake for a further 20–30 seconds. Strain into a chilled Nic & Nora or Martini glass and dust with cinnamon sugar.

HM Seven Spice Chai Gin is distilled with cinnamon, star anise, cardamom, nutmeg, cloves, black pepper, ginger, tea extract, and juniper — all botanicals added directly to the pot of the still for distillation, with nothing in the botanical basket. After distillation, a generous amount of wildflower honey is added to balance the spices and juniper and deliver the gin’s signature smooth, creamy finish. All honey is sourced from Bizzy Beehive Australia, based in Beveridge, Victoria — a local partnership that reflects the Hillmartin commitment to community and provenance.
