History & Philosophy

Founded by a father-daughter duo united by a love of flavour, craftsmanship, and the art of distilling, Hillmartin Distillery was built on the belief that great gin should be both approachable and extraordinary. Every expression in the range is crafted in small batches using quality botanicals and pure Australian ingredients, with an unwavering commitment to flavour integrity, smoothness, and creativity.

From the outset, Hillmartin has refused to follow convention. Alongside a classically structured London Dry, the distillery has produced a Pinot Noir gin made from hand-picked single vineyard Victorian grapes, a cult-favourite Hot Cross Bun gin released in tiny limited batches, and — most recently — the Seven Spice Chai Gin that has taken the global gin world by storm. All expressions are gluten-free and the majority are vegan-friendly.

HM Seven Spice Chai Gin 500mL (New — Best Seller) — The gin that has redefined what Australian craft gin can be. Back-to-back winner of Australia's Best Contemporary Gin at the World Gin Awards (2024 & 2025), and now the best-selling gin in the Hillmartin range. A big, bold explosion of seven exotic spices — cinnamon, star anise, cardamom, nutmeg, cloves, black pepper, and ginger — distilled directly in the pot of the still alongside juniper and tea extract, then finished with velvety Bizzy Beehive wildflower honey sourced from Beveridge, Victoria. Warm golden amber in colour. The nose weaves all seven spices together with earthy tea depth and a classic juniper backbone, softened by the floral sweetness of wildflower honey. The palate is rich, creamy, and full of genuine depth and warmth, with a velvety mouthfeel and a signature smooth finish. Exceptional with ginger ale and a wedge of lime, outstanding on the rocks, or as the star of a Chai Espresso Martini (60mL Seven Spice Chai Gin, 30mL espresso, cinnamon sugar to garnish). HM Gin No.1 Rare Dry 500mL — The flagship London Dry expression and the foundation of the Hillmartin range. Winner of the Gold Medal and named Australia's Best London Dry Gin at the 2023 World Gin Awards. Bright and refreshing with hints of citrus and spice over a well-balanced juniper base, and an incredibly smooth finish. Crystal clear in appearance. Clean, bright, and refreshing on the nose with citrus and spice leading over juniper. Delicious and well-balanced on the palate with a long, smooth, lingering finish. Perfect in a classic gin and tonic with lemon or lime, or in a dry Martini. Gluten-free. Vegan. 43% ABV.

HM Gin No.3 Blushing Pink 500mL — The ultimate pink gin for lovers of fresh Australian strawberries and raspberries. Crafted with Hungarian juniper berries, fresh strawberries, fresh raspberries, and coconut sugar. Vibrant pink hue with excellent clarity. Sweet and captivating on the nose with fresh raspberries and strawberries layered over a dry juniper base. Fresh and fruity on the palate with natural sweetness from coconut sugar. Serve over ice with premium tonic and a fresh berry garnish, or in a pink gin spritz. Gluten-free. Vegan. 43% ABV.

HM Gin No.5 Orange Squeeze 500mL — The most popular gin in the Hillmartin range and a Bronze Medal winner at the International Gin Awards London 2022. A commanding navel orange gin with a double dose of juniper berries, crafted with coriander seeds, cinnamon, cassia sticks, and locally grown lemon and anise myrtles. Clean and bright in appearance. Commanding navel orange on the nose with coriander, cinnamon, cassia, lemon myrtle, and anise myrtle. Incredibly smooth and rounded on the palate. Serve over ice with tonic or soda and an orange garnish, or use as the base of a negroni twist. 43% ABV.

HM Pinot Noir 2022 Gin 500mL — A truly unique expression — hand-crafted by steeping hand-picked, single vineyard Victorian Pinot Noir grapes from Panton Hill directly in the award-winning HM No.1 Rare Dry Gin. Elegant and aromatic with great depth of flavour and an incredibly smooth finish. A gin that bridges the worlds of wine and spirits, and a must-try for Pinot Noir lovers. Vegan. 42.7% ABV.

HM Hot Cross Bun Gin — Limited Annual Release 500mL — A cult-favourite limited release that has become one of the most anticipated events in the Australian craft gin calendar. Produced in tiny batches — fewer than 250 bottles in 2023 and just 140 bottles in 2024 — the Hot Cross Bun Gin is loaded with sultanas, raisins, and dates soaked into the base before distillation, alongside juniper, cinnamon, cassia, nutmeg, allspice, coconut sugar, and fresh navel orange. The result is a gin that captures the warm spices and sweet fruit of a freshly baked hot cross bun in a bottle. Gluten-free. Vegan. 43% ABV.
