Winemaking Notes

The different grape varieties are harvested separately, with the aim of achieving optimum ripeness for each. The vinification process is designed to respect the specific characteristics of each grape variety and the capacity of the terroir. Harvesting is mechanical, with on-board sorting. The grapes are de-stemmed, cooled to 8°C and sent to the press to extract the rosé must. Particular care is taken during pressing to ensure that only the highest-quality first juices are retained. The juices are then settled to a greater or lesser extent, depending on the desired aromatic profile. Fermentation lasts between 15 and 30 days, depending on the degree of clarification and temperature applied. The particularity of these vinifications lies in the attention paid to the colour and aromatic purity of the wines. Finally, after light fining, the wine is bottled fairly early to preserve its fresh, fruity character.

Vintage Conditions

The 2024 vintage in Languedoc benefited from the region's semi-arid Mediterranean climate, characterised by warm, windy conditions balanced by altitude and sea breezes. These conditions ensure optimal grape ripening and freshness, essential for producing high-quality rosé. The vineyards are rooted in diverse soils including limestone, schist and river gravels of the Languedoc, each contributing unique characteristics to the wine. The combination of varied terroir and ideal climate creates wines with exceptional balance between aromatic intensity and refreshing acidity. The warm Mediterranean sun develops concentrated fruit flavours, whilst the cooling sea breezes and altitude preserve natural acidity and delicate aromatics, resulting in a rosé with pale, luminous colour, complex red fruit character and vibrant elegance.
