The high percentage of Pinot Noir ensures a full-bodied, rich style that defines Bollinger's distinctive house character, whilst the addition of 5 to 10% reserve wines, each aged up to fifteen years, gives remarkable complexity and depth to the final blend. This careful incorporation of reserve wines is central to the Special Cuvée's consistent quality and mature character, allowing the wine to display layers of flavour that develop from extended lees ageing. The wine shows yeast on the nose, dry and toasty in the mouth, with great length and perfect balance that exemplifies Bollinger's commitment to traditional Champagne production methods.
