Dexter Pinot Noir 2024 is a world-class Mornington Peninsula Pinot Noir from a site planted with MV6, 777, D5V12, and Pommard clones β€” hand-picked, partially whole bunch fermented, and matured for ten months in French oak barriques and puncheons. Just-ripe cherry, plum sauce, and Sichuan pepper dominate the soft entry, with an added layer of confected fruit and spice from the whole bunch component. Lattice-like tannins define the structure and carry the wine to great depth, with an intriguing savoury character and a finish of pure fruit sweetness that will fill out further over time.

Winemaking Notes

Hand-picked fruit from MV6, 777, D5V12, and Pommard clones β€” destemmed without crushing and elevated into small open fermenters. Fruit remains un-inoculated for 2–3 days before a cultured yeast is added when fermentation is observed. Depending on the season, a percentage of fruit is left as whole bunches, fermented separately, and blended back into the finished wine. Must temperatures peak at around 32Β°C during fermentation, with the cap plunged or pumped over up to twice daily. 2–3 days after fermentation is complete, the must is gently pressed and transferred into French oak barriques and puncheons β€” typically around 20% new, 10% second use, and the remainder older β€” where malolactic fermentation occurs before winter. Racked just prior to bottling in January, approximately ten months after harvest.
