Bakery Hill Peated Malt Cask Strength Single Malt presents a rich gold russet of an evening sunset — the hallmark of a single malt matured for up to 8 years in American Oak Ex-Bourbon barrels at the Bakery Hill distillery in Melbourne, bottled individually from each barrel with no blending and no compromise. Commanding and immediately impressive in the glass.

Aroma

A rich, subdued peat aroma opens with natural leathery earthiness — kumquat and fruit mince tart adding an exotic sweetness and complexity that is immediately distinctive. The Highland-style peat produces an earthy, rounded smoke with minimal medicinal or iodine notes, while the cask strength intensity amplifies every nuance of the malt with undiluted power and presence. Sweet, but not sickly.

Palate

The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palate, demanding just one more sip. The moderate peating level strikes a perfect balance — sweet, rich malt flavours shine through the smoke with depth and satisfaction, intensified and undiluted at cask strength. Bakery Hill Peated Cask Strength Single Malt Whisky is crafted from malted barley peated in northern Scotland to a moderate level, producing a distinctly Highland-style earthy, rounded peat smoke with minimal medicinal or iodine notes. Milling, brewing and distilling is conducted at the Bakery Hill distillery in Melbourne, before maturing for up to 8 years in American Oak Ex-Bourbon barrels. Each barrel is bottled individually — no blending, no compromise — at an undiluted cask strength of approximately 60% ABV.
