The Tokay Barrel Single Malt takes that deep barrel heritage and applies it directly to whisky: an Australian single malt made from local ingredients, matured predominantly in French oak ex-red-wine casks, then finished in barrels previously used to age Morris 15 Year Old Cellar Reserve Grand Topaque.
Tasting Notes
Colour: Rich copper.
Nose: Dried orchard fruits, malted butterscotch and burnt toffee pecan. The Topaque barrel influence is immediate, adding generous sweetness and concentration to the base malt character.
Palate: Fresh fruit leads, followed by white chocolate crème brûlée and toasted spice. Rich and layered, with excellent balance between fruit sweetness and malt structure.
Finish: Long with persistent raisin character and warm malted honeycomb. The finish lingers and evolves well beyond the first sip.
Cask & Maturation
Matured predominantly in French oak ex-red-wine casks, then finished in barrels previously used to age Morris 15 Year Old Cellar Reserve Grand Topaque (Tokay). The Topaque finishing casks bring a distinctive richness and depth of dried fruit character that is a direct product of their history in one of Australia's most celebrated fortified wine programs. The result is a whisky with textural weight and flavour complexity that sets it apart from straightforward single malt expressions.
