The nose is refined, elegant and immediately captivating, with aromas of jasmine, violet, candied fruit, prune and cinnamon creating a beautifully layered and expressive aromatic profile of genuine complexity and distinction. The bouquet reflects the fine quality of Fins Bois and Petite Champagne eaux-de-vie at their most elegant — a nose of outstanding fragrance and refined French Cognac character that rewards slow, contemplative appreciation.

Production Notes

DEAU XO Cognac is a blend of eaux-de-vie sourced predominantly from the Petite Champagne and Fins Bois sub-regions of the Cognac AOC — regions renowned for the fine quality and vibrant, fresh character of their eaux-de-vie, produced from the dominant Ugni Blanc grape variety. The eaux-de-vie are aged in Limousin oak barrels in the historic cellars of Les Moisans — a lovely hamlet in the Fins Bois sub-region that is home to DEAU’s twelve-still distillery, ageing cellars and beautifully restored Manor House. The Limousin oak ageing imparts the oaky, floral and candied fruit complexity that defines DEAU XO’s refined and elegant character, whilst the careful blending of Petite Champagne and Fins Bois eaux-de-vie ensures the full-bodied, well-balanced finish that is the hallmark of this exceptional Cognac.

History

The story of DEAU Cognac began in 1685 during the reign of King Louis XIV, when Louis Deau became a winegrower in Charente and discovered the mythical alchemy of distillation — a moment that set in motion over 300 years of family Cognac-making heritage at Les Moisans. The estate, located in the Fins Bois sub-region, includes the ageing cellars, the twelve-still distillery, the offices and the beautifully restored Manor House that welcomes visitors and Cognac aficionados from around the world. Today, DEAU Cognac remains a true family affair — a producer of exceptional eaux-de-vie from the Petite Champagne and Fins Bois sub-regions, crafted with the same passion, expertise and dedication to quality that Louis Deau brought to his first distillation in 1685.
