After pressing and fermentation, the wine undergoes oxidative ageing for six years in American oak casks using the traditional Solera and Criaderas system. The result is a Sherry of intense mahogany colour, with aromas of raisins, figs, cinnamon, and vanilla, and a palate that is rich, complex, and velvety, with a smooth and persistent finish of dried fruit.
