Suntory's younger and often overlooked Hakushu distillery was established in 1973 in the town of Hokuto, in the Yamanashi Prefecture, Chūbu region. The distillery's higher elevation at 700 metres above sea level (Scotland's highest distilleries are Dalwhinnie and Braeval, both about 355 metres) and water source are said to be the key features that distinguish Hakushu, in addition to working with both un-peated and peated malt sourced from Scotland at roughly 25ppm, compared to its big sister, Yamazaki. The Hakushu Distiller's Reserve Single Malt Whisky was released in 2014, created for Yamazaki and Hakushu, showcasing the distinctive character of this elevated distillery. The fresh citrus notes with peppermint, melon, cucumber, yuzu, grapefruit and lemon thyme reflect the unique terroir and production methods that define Hakushu's exceptional Japanese single malt whisky.

Production Notes

The Hakushu Distiller's Reserve combines young, lightly peated malts and older, heavily peated malts rumoured to be minimum eighteen years of age, matured in American oak casks. Maturation typically takes place in American oak - both ex-bourbon (180L) and reconstructed hogsheads (230L) - however European oak is also known to be used. The production process creates fresh character with citrus notes, featuring light gold colour with peppermint, melon and cucumber on the nose. The palate delivers yuzu, grapefruit and lemon thyme, whilst the finish is refreshing with subtle smoke. The combination of young lightly peated and older heavily peated malts creates exceptional balance and distinctive character, showcasing Suntory's expertise in crafting premium Japanese single malt whisky. The American oak cask maturation develops the fresh citrus character whilst the peated malts contribute refreshing subtle smoke finish, creating the exceptional quality that defines Hakushu Distiller's Reserve released in 2014.
