Winemaking Notes

Each Coonawarra vineyard was carefully monitored as ripening progressed, with only those parcels exhibiting excellent potential in terms of colour, varietal expression, and tannin structure selected for inclusion in the St Hugo blend. All grapes were de-stemmed and crushed into static and open fermenters, with colour, flavour, and tannin extracted by regular pump-overs and full drain-and-returns to build structured yet supple tannin profiles. Malolactic fermentation and 18 months’ maturation took place in 41% new French oak, with the balance in a mix of used oak. Individual parcels were tasted to identify those showing the distinctive regional and varietal characteristics required for St Hugo, and the wine was matured in bottle prior to release to allow further integration.

Vintage Conditions

The 2022 vintage in Coonawarra provided excellent conditions for producing distinguished Cabernet Sauvignon — Coonawarra’s unique terra rossa soils and cool maritime climate creating ideal conditions for developing the classic aromas and sophisticated layers that define the region. Under the direction of Chief Winemaker Peter Munro — who took the reins in 2019 with over two decades of experience across the Barossa Valley, Hawke’s Bay, and Napa Valley — the careful vineyard selection process and meticulous winemaking resulted in an exemplary expression of terroir with sophisticated layers, harmoniously integrated tannins, and excellent structure.
