Winemaking Notes

Hand-picking commences in mid-September for the Trebbiano di Soave component and continues through October for the Garganega — each variety harvested at optimal ripeness. Grapes are carefully de-stemmed and gently crushed using a pneumatic press in nitrogen saturation to protect delicate aromatics and prevent oxidation. Free-run juice is fermented at 14–18°C in glass-lined concrete tanks — a traditional method that preserves fresh, vibrant character and allows pure fruit expression to develop. The wine remains on fine lees in glass-lined concrete tanks for 5–9 months depending on the vintage, building textural complexity and subtle depth without overwhelming the wine’s characteristic elegance. Bottled and released after at least a further month in bottle.

Vintage Conditions

The 2025 vintage in the Soave Classico zone delivered exceptional conditions — the region’s unique microclimate and volcanic soils allowing the vines to develop concentrated aromatics whilst maintaining the vibrant natural acidity essential for premium Soave. The staggered harvest from mid-September through October allowed each variety to achieve optimal physiological ripeness, with the volcanic soils imparting the distinctive mineral edge that carries through to the wine’s lengthy, refined finish. A vintage of remarkable freshness, purity, and elegance.

Pieropan is the estate that put Soave on the world map — a family producer based in Soave whose commitment to Garganega, volcanic terroir, and traditional winemaking has made them the benchmark against which all Soave Classico is measured. Founded by Leonildo Pieropan, and now led by the next generation of the family, the estate’s philosophy has never wavered: hand-harvest, protect the aromatics, ferment cool, and let the volcanic soils of the Soave Classico zone speak for themselves.
