Maidenii Sweet Vermouth is an exemplary Australian vermouth — designed with the classic Negroni in mind and crafted with a Cabernet Sauvignon base wine and a distinctive selection of native Australian botanicals. Strawberry gum, wattle seed, river mint, sea parsley, grapefruit zest, mace, and angelica root combine to deliver a vermouth of genuine complexity, character, and provenance. Made in Victoria by bartender Shaun Byrne and winemaker Gilles Lapalus, Maidenii is a celebration of Australia’s extraordinary botanical landscape.

Tasting Notes

Appearance

Deep, warm ruby — the rich, inviting colour of a Cabernet Sauvignon-based sweet vermouth, with the depth and complexity that native Australian botanicals and careful winemaking deliver.

Aroma

Aromatic and distinctive — a bouquet of native botanicals leads, with strawberry gum, wattle seed, and river mint weaving through grapefruit zest and warm spice. Genuinely Australian in character, and immediately intriguing.

Palate

Rich and complex — the Cabernet Sauvignon base provides structure and depth, while the native botanicals deliver a layered, herbaceous sweetness that is distinctive without being cloying. Mace and angelica root add warmth and length to a satisfying, lingering finish.

Pairs With

Maidenii Sweet Vermouth is the essential ingredient in a classic Negroni — equal parts Maidenii, Campari, and gin over ice in a rocks glass, garnished with an orange twist — and is equally rewarding sipped chilled on its own or alongside a charcuterie board.

Production Notes

Maidenii Sweet Vermouth is crafted at Sutton Grange Winery near Castlemaine, Victoria, using a Cabernet Sauvignon base wine and a carefully selected blend of native Australian and traditional botanicals — strawberry gum, wattle seed, river mint, sea parsley, grapefruit zest, mace, and angelica root. Bottled at 16% ABV, it is a vermouth of genuine provenance and complexity, designed to perform beautifully in classic cocktails and to reward those who appreciate the extraordinary depth of Australia’s botanical landscape.

Producer History

Maidenii Vermouth was co-founded by Shaun Byrne — a bartender who returned to Australia after four years working in the UK, and became part of Melbourne’s celebrated Gin Palace — and Gilles Lapalus, a French winemaker who moved to Australia in 2001 to manage biodynamic viticulture and winemaking at Sutton Grange Winery near Castlemaine, Victoria. Gilles began experimenting with botanicals in 2011, and after meeting Shaun, the two co-founded Maidenii Vermouth. Their namesake, Joseph Maiden, was a celebrated botanist and champion of the eucalypt and acacia — a man who found value and beauty in Australia’s oft-neglected botanical wealth. Maidenii carries that spirit forward in every bottle.
