Winemaking Notes

Fruit was harvested in distinct batches and fermented separately for 10–14 days. The wine was then pressed to tank to undergo malolactic fermentation and subsequently racked to largely seasoned French oak barrels. After 14 months maturation, the barrels were emptied and some Moonambel and Eagle Shiraz barrels were included in the final blend for further depth and complexity.

Vintage Conditions

The 2021 vintage in the Pyrenees region benefited from cool-climate growing conditions that are characteristic of this elevated Victorian wine region. The cooler temperatures allowed for extended ripening periods, resulting in wines with excellent flavour development whilst retaining natural acidity and elegance. The high-altitude vineyards of Dalwhinnie, situated in the heart of the Pyrenees, experienced ideal conditions for producing structured, age-worthy shiraz with concentrated fruit flavours balanced by fine tannins and aromatic complexity.
