De Bortoli DEEN Cabernet Sauvignon 2021 brings together fruit from Heathcote and the Yarra Valley in a generous Victorian Cabernet. Blackcurrant, dark chocolate and dried herb introduce a palate of dark berry fruit and cedar, with fine tannins carrying the finish. Matured predominantly in American oak, it combines fruit depth with a savoury edge and a structured close.

Winemaking

Fruit was harvested in the cool of the morning to preserve freshness, then destemmed into Potter fermenters for a seven-day fermentation. The wine was pressed at dryness, with a small portion matured in stainless steel vat and the remainder spending 12 months in new and older American hogsheads and barriques.
