De Bortoli Windy Peak Chardonnay 2024 is a textural, creamy Riverina Chardonnay crafted by winemaker John Coughlan from night-harvested fruit. Forty per cent of the blend is fermented in old French oak barriques and hogsheads, with the entirety of the blend through malolactic fermentation and twelve months on yeast lees. The result is a Chardonnay of genuine flavour, depth, and the temerity to walk lock step with a beef wellington.

Tasting Notes

Appearance

Light to medium straw with a bright, clean clarity — the fresh, inviting colour of a Riverina Chardonnay harvested at night for optimal freshness and precision.

Aroma

Complex white peach, grilled nuts, and lifted citrus — the expressive, layered bouquet of a Chardonnay where warm barrel fermentation, extended lees contact, and full malolactic fermentation build flavour and texture without sacrificing aromatic lift.

Palate

Textural, creamy, and buttery, with a fine acid finish that keeps everything fresh and balanced. Full of flavour from twelve months on yeast lees with minimal stirring, with the white peach and grilled nut character carrying through to a long, satisfying close.

Pairs With

A natural partner for beef wellington, roast chicken, grilled fish, lobster, creamy pasta, and soft cheeses — the creamy texture, white peach depth, and fine acid finish make Windy Peak Chardonnay a deeply versatile companion for the finest food at the table.

Winemaking Notes

Fruit harvested at night, pressed and left to settle, then racked the following day to barrel and tank. Forty per cent of the blend is fermented in old French oak barriques and hogsheads, with the remainder in tank. Warm fermentation and extended lees contact build flavour and texture throughout. The wine matures on yeast lees for twelve months with minimal stirring, and the entirety of the blend undergoes malolactic fermentation for further softening and creamy texture. 13% ABV. pH: 3.54. TA: 6.44 g/L. Cellaring: up to five years in a good cellar.

Vintage Conditions

Following a dry winter, late spring and early summer rains gave the vines the impetus for growth, with average yields across the white varieties. Harvest commenced on 21st January. With lower crops, the fruit ripened quickly and cleanly — delivering the concentrated, fresh character that defines Windy Peak Chardonnay at its best.
