Fruit is harvested and sorted by hand. Each small parcel is fermented separately, with some whole bunch inclusion. Maceration and fermentation with wild yeast runs for 15–18 days. After pressing, the wine is settled overnight and filled to barrel by gravity, then matured for 8 months in new and used French oak casks. The approach prioritises freshness, texture and aromatic integrity over extraction.

The De Bortoli Yarra Valley vineyards were first planted in 1971 and through careful expansion and thoughtful replanting, we have introduced new planting stock that have improved brightness, perfume and charm. This is the second vintage to have included these new vineyards.
Low cropping cool and mild growing season, picked in early March. Bright colours, amazing perfume and charm.
Fruit is harvested and sorted. Each small parcel is fermented
separately, some with whole bunch inclusion. 15-18 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel by gravity. Allowed to mature for 6 months in new and used 225L and 500L French casks.
