Appearance

Deep bronze — bushfire sunset, copper — the rich, dramatic colour of a nine-year-old single malt that has journeyed through American oak ex-bourbon barrels, Bakery Hill Eldorado sherry cask whisky, and two full years in an ex-Hop Nation Kalash Imperial Stout cask.

Aroma

Maple syrup, burnt caramel, crème brûlée, sweet banana, vanilla, and toasted demerara — a complex, layered, and deeply inviting bouquet where the rich foundation of American oak maturation meets the stout cask’s dark, textural influence and the lingering imprint of sherry fortified nectar.

Palate

Malt biscuit, orange zest, dark chocolate, coffee, and mint — a burst of juicy apricot and bold barbecued pineapple alongside softer chocolate notes from the Kalash stout cask, with Bakery Hill’s characteristic malt-forward profile of malted milkshakes, toasted sesame, Milo ice cream, pineapple tarte tatin, and ironbark honey. Complex yet beautifully integrated. Bold and textural throughout.

Pairs With

A natural companion for dark chocolate, espresso, aged hard cheeses, and — as Bakery Hill recommends — the Hop Nation Kalash Imperial Stout itself, for one of the most imposing boilermakers of all time. Finish

Long lasting and lingering — dark chocolate mouthfeel, developing waves of length, and a drying finish of dark chocolate and dry cacao nibs that leaves you wanting more. The stout cask takes a prominent final role, reminding you exactly what you’ve been tasting.

“The stout cask, while still prevalent, is very well integrated and highlights the spirit’s character beautifully. Bakery Hill has always had a malt-forward profile, with notes of stone fruit and an umami, yeasty backbone, and this remains evident throughout the release. On the front palate, this spirit character is immediately apparent, balanced against the cask. A burst of juicy apricot leads the way, sitting alongside bold barbecued pineapple and softer chocolate notes derived from the Hop Nation ‘Kalash’ stout cask. This is followed by Bakery Hill’s malt character coming through, with notes of malted milkshakes and toasted sesame, once again meeting the cask for further notes of Milo ice cream, pineapple tarte tatin, and ironbark honey. This all comes to a close on the back palate and finish, where the cask takes a more prominent role and reminds you that, after all of that intricate balance, you are indeed tasting a stout cask whisky. Dark chocolate and dry cacao nibs lead into a drying finish that leaves you wanting more. I truly enjoyed the journey this release has taken me on — one of my favourite Blunderbuss releases to date!”
