Bakery Hill Peated Malt is a rich gold russet Highland-style peated single malt whisky — subdued peat aroma with natural leathery earthiness, kumquat and fruit mince tart on the nose, tobacco leaf earthiness with complex smoky peat, toffee and honeycomb on the palate, and an astonishingly long and complex finish. Low to medium peating level ensures balance, allowing the sweeter, floral and fresh notes to shine through. Gold Medal, 2021 Australian Distilled Spirits Awards. Single barrel maturation.

Bakery Hill Peated Malt Single Malt Whisky presents a rich, golden russet hue with excellent depth — the hallmark of a single malt matured for up to 8 years in American Oak Ex-Bourbon barrels from Jack Daniels in Tennessee, with single barrel maturation ensuring every ounce of flavour without blending. Commanding and immediately intriguing in the glass.

Aroma

A rich, subdued peat aroma opens with natural leathery earthiness — kumquat and fruit mince tart adding an exotic sweetness and complexity that is immediately distinctive. The Highland-style peat from northern Scotland produces an earthy, rounded smoke with minimal medicinal or iodine notes, allowing the sweeter, floral and fresh spirit character to shine through with genuine elegance. Sweet, but not overly so.

Palate

The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoke intermingling with toffee and honeycomb — a beautifully balanced interplay of peat and sweetness that lingers on the lips and palate, demanding just one more sip. The low to medium peating level ensures the peat acts as a complementary flavour rather than overpowering the malt, with the sweeter profiles carrying through with depth and satisfaction.

Producer History

Bakery Hill Distillery was founded by distiller David Baker over 20 years ago with a singular vision — to produce world-class single malt whisky in Melbourne, Victoria.
