Bakery Hill Double Wood Single Malt is a richly complex and deeply rewarding Australian single malt — matured for up to seven years in American oak ex-bourbon barrels for smooth vanilla and honeyed notes, then transferred to a virgin French oak ex-wine cask, carefully shaved back to bare wood and lightly toasted, to draw out the natural character of the oak itself. Each barrel is matured and bottled individually, ensuring every drop captures the full depth of flavour without blending. Apricot, coconut, plum, golden syrup, and plum pudding on the nose; orange marmalade, rich nougat, and well-balanced oak on the palate; rounded and lingering to the very end. Rich, multi-dimensional, and reminiscent of Christmas in a glass.

Appearance

Rich burnished bronze — the warm, inviting colour of a single malt that has journeyed through American oak ex-bourbon barrels and virgin French oak ex-wine casks, with the depth and complexity that individual barrel maturation and bottling delivers.

Aroma

The nose opens with the slightest hint of apricot, coconut, and plum, going on to reveal an intermingling of golden syrup and plum pudding warmed by the spicy hint of cloves — the complex, layered bouquet of a Double Wood single malt of genuine Australian character and distinction.

Palate

Subdued and mouth-filling — orange marmalade overtones with the characteristic rich nougat sweetness and well-balanced oak. Layers of caramel, spice, and toasted nuts balanced by the fresh, lively character of the underlying Bakery Hill unpeated spirit. Complex yet approachable. Rich and multi-dimensional.
