Schild Estate Heritage & Philosophy

Schild Estate's story began in 1952 when the Schild family established their presence in the Barossa Valley, becoming part of the region's rich winemaking tapestry. Today, the estate remains family-owned and operated, with multiple generations contributing their expertise and passion to every vintage. The winery's philosophy centres on sustainable vineyard management, minimal intervention winemaking that allows terroir to shine, respect for old vine heritage and traditional Barossa practices, and crafting wines that balance power with elegance and drinkability.

The estate's vineyards are located in prime Barossa Valley sites, including holdings of precious old vine Shiraz and Grenache that contribute remarkable concentration and complexity to their wines. Schild Estate's commitment to sustainability extends across all vineyard operations, ensuring the land remains healthy and productive for future generations.

Barossa Valley: Australia's Premier Wine Region

The Barossa Valley, located approximately 60 kilometres northeast of Adelaide in South Australia, represents one of the world's great wine regions and Australia's most iconic. The valley's winemaking heritage dates to the 1840s when German and British settlers established the region's first vineyards, creating a tradition that has flourished for over 175 years.

The Barossa Valley is renowned globally for producing some of the world's finest Shiraz, with the region home to some of the oldest continuously producing Shiraz vines on earth—many dating back to the 1840s and 1860s. These ancient vines, having survived phylloxera that devastated European vineyards, produce fruit of extraordinary concentration, complexity, and character that defines Barossa Shiraz's distinctive style.

Barossa Valley Climate & Terroir

The Barossa Valley's Mediterranean climate creates ideal conditions for premium red wine production, particularly for Shiraz and other Rhône varieties. The region is characterised by warm to hot summers with average January temperatures of 21-29°C, mild winters with moderate rainfall concentrated in winter months, low humidity and consistent sunshine throughout the growing season, and significant diurnal temperature variation—warm days followed by cool nights that preserve acidity and aromatics.

The valley floor and surrounding hills range from 250 to 550 metres elevation, creating diverse mesoclimates that allow for varied wine styles. The region's terroir is defined by ancient soils including red-brown earth over limestone and clay in the valley floor, providing excellent water retention and mineral complexity, grey sandy loam in elevated sites, offering excellent drainage, and ironstone gravels that contribute structure and concentration. These diverse soil types, combined with varying elevations and aspects, create a mosaic of terroirs that produce wines with distinctive character and sense of place.

Shiraz: Barossa's Signature Variety

Shiraz is the undisputed king of Barossa Valley, representing the region's most important variety and producing wines of international acclaim. Schild Estate's Barossa Shiraz showcases the variety's classic regional expression with deep, opaque colour with purple highlights, concentrated aromatics of blackberry, plum, and dark cherry, notes of chocolate, liquorice, spice, and vanilla from oak ageing, full body with velvety, ripe tannins, and a rich, persistent finish with excellent ageing potential.

The estate's Shiraz program includes their flagship Barossa Valley Shiraz, offering approachable yet complex expression of the region, and the Edel Small Batch Shiraz, a premium selection from exceptional vineyard parcels showcasing the finest fruit and extended oak maturation. Barossa's warm climate allows Shiraz to achieve optimal ripeness, developing the concentrated fruit flavours and soft, supple tannins that define the regional style.

Rhône Varieties & Blends

Beyond Shiraz, Schild Estate cultivates classic Rhône varieties that thrive in the Barossa's Mediterranean climate. Grenache, one of the Barossa's heritage varieties with old vine plantings dating back generations, produces wines with bright red fruit character, spice notes, and approachable tannins. Mourvèdre (also known as Mataro in Australia) contributes structure, earthy complexity, and savoury notes to blends. These varieties, often blended in traditional GSM (Grenache, Shiraz, Mourvèdre) combinations, create wines that balance fruit generosity with complexity and food versatility.

Merlot & Other Varieties

Schild Estate's Barossa Valley Merlot demonstrates the region's versatility beyond Shiraz. The variety benefits from the Barossa's warm climate, developing ripe plum and cherry fruit, soft, approachable tannins, and medium to full body with smooth texture. Barossa Merlot offers immediate drinking pleasure whilst maintaining the structure for short to medium-term cellaring. The estate also produces Cabernet Sauvignon, showcasing the variety's classic blackcurrant fruit and structured tannins in the Barossa context.

Winemaking Philosophy

Schild Estate combines traditional Barossa winemaking techniques with modern precision and innovation. The winemaking approach includes careful hand-picking and sorting to ensure only premium fruit enters the winery, gentle handling to preserve fruit integrity and natural tannins, fermentation in a combination of open and closed fermenters, and maturation in French and American oak barrels that add complexity, vanilla notes, and textural richness without overwhelming fruit character.

The estate's use of both French oak (contributing fine-grained tannins and subtle spice) and American oak (adding sweet vanilla and coconut notes) creates wines with layered complexity and the distinctive oak integration that characterises premium Barossa reds. Extended barrel ageing allows tannins to soften and integrate, producing wines that are approachable upon release yet reward cellaring.

Tasting Profile & Food Pairing

Schild Estate wines showcase classic Barossa character with generous fruit concentration, balanced oak influence, and supple tannin structure. These wines pair beautifully with grilled and barbecued meats, slow-cooked lamb and beef dishes, game including venison and kangaroo, aged hard cheeses, and rich pasta dishes with meat-based sauces. The wines' full body and ripe tannins complement rich, flavourful foods whilst their underlying acidity provides balance.

Cellaring Potential

Schild Estate wines are crafted for both immediate enjoyment and medium to long-term cellaring. The Barossa Valley Shiraz develops beautifully over 5-10 years, whilst the premium Edel Small Batch Shiraz can age gracefully for 10-15+ years, developing tertiary notes of leather, tobacco, and dried fruit alongside the primary fruit characters.

We offer great value on Schild Estate's premium Barossa Valley wines, showcasing over 70 years of family winemaking tradition and the distinctive character of Australia's most iconic wine region, delivered across Australia.
