Winemaking Notes

Grapes are de-stemmed and crushed, then fermented in temperature-controlled cement tanks with indigenous yeasts. Malolactic fermentation occurs spontaneously. The wine ages in large un-toasted 54hl barrels, followed by several months of bottle ageing before release — a non-invasive approach consistent with Poggiotondo’s organic philosophy in the vineyard. 2023.

Producer History

Poggiotondo is a certified organic estate in Tuscany, producing wines exclusively from estate-grown grapes. A return to traditional vineyard management abolished all synthetic chemicals, allowing the soil to regenerate and remain alive — encouraging vines to develop their own antibodies for healthier fruit, greater character, and longer-lived vineyards. The same non-invasive principles guide the winery: minimal intervention, indigenous yeasts, and a commitment to expressing the true character of the estate and its terroir.
