Production Notes

The Sweet Toast of American Oak begins in Louisville, Kentucky, at Kelvin Cooperage — a family-run business since 1963, where Kentucky Virgin Oak barrels are toasted uniquely over open fires of white oak, releasing the vanillins within the American oak in an intoxicating nutty, marzipan-rich process. Once the barrels arrive in Scotland, Head Cooper Ian McDonald gives each cask an extra deep toast in The Balvenie Cooperage — “We’re adding extra life and flavour into the wood,” he explains. “Our signature Balvenie burn refreshes the wood, bringing out all the flavour, colour, vanilla.” The pre-toasted casks are then filled with whisky aged primarily in ex-bourbon casks and laid down for cask finishing — a process pioneered by Honorary Ambassador and Former Malt Master David C Stewart. The result is a whisky of exceptional sweetness, fruity complexity, and depth.

Producer History

The Sweet Toast of American Oak is the creation of Kelsey McKechnie, who at just 25 had earned her place as Malt Master at The Balvenie — valued for her fearless approach to experimentation and her genuine respect for craft. “I love trying to understand the changes to The Balvenie whisky that happen during the making process,” she explains. “It helps me appreciate how much the craft has evolved over time and how specific flavours are created.” At a team get-together, the seed of an idea took root: an experiment to produce an even fruitier, sweeter-tasting Balvenie. Supported by the expertise of David C Stewart, Kelsey sourced the Kentucky Virgin Oak barrels from Kelvin Cooperage and set the 3,792-mile journey in motion. As Mashman Brian Webster puts it with characteristic Speyside candour: “Some would call us ‘aff our heeds’, but I suppose you’ve got to try something really different now and again.” In whisky, nothing happens overnight — but when it does, the results speak for themselves.
