Winemaking Notes
The Dark Horse Cabernet Sauvignon 2023 is crafted from fruit displaying bold and ripe Cabernet Sauvignon varietal characters, sourced from Rymill's Coonawarra vineyards. Winemakers Lewis White and Maria Best employed techniques specifically tailored to building depth and intensity during fermentation, extracting optimal colour, flavour, and tannin structure from the fruit. The winemaking approach focuses on capturing the free-spirited nature of the vintage whilst maintaining the classic Coonawarra Cabernet profile. Following fermentation, the wine was matured on French oak to provide rich toasty aromatics and balance, integrating the bold fruit characters with subtle oak influence. This careful oak maturation adds layers of vanilla, dark chocolate, and coffee complexity without overwhelming the wine's vibrant fruit core. The result is a wine that showcases bright, juicy forest fruits on the palate, unfolding into rich notes of dark chocolate and coffee on a long, supple finish. At 14% alcohol, the wine achieves excellent balance between power and elegance, with the structure to support both immediate enjoyment and extended cellaring.
