Billi Billi Rosé is Mount Langi Ghiran’s everyday cool-climate rosé — dry, fresh and immediately enjoyable. Named after the creek that runs through the property, it captures the lighter, more approachable side of a winery better known for powerful Shiraz. Whole bunch pressed Sangiovese and Shiraz, fermented cool to lock in freshness and delicacy, the result is a rosé that is genuinely food-friendly and easy to reach for.
Appearance
Bright pale pink with excellent clarity — clean and inviting in the glass.
Nose
Subtly spiced and fragrant with strawberries and wild cherries at the centre. Fresh and clean with a gentle lift that makes it immediately appealing. The cool Grampians climate keeps the aromatics precise rather than jammy — this is a rosé that smells like it will drink dry, and it does.
Palate
Bone dry with raspberry and strawberry fruit that carries through from nose to finish. Crisp, lively acidity keeps the palate fresh and the wine food-friendly across a wide range of dishes. Light-bodied with a clean, bright finish — no sweetness, no weight, just fruit and freshness in the right proportions.
Winemaking
Whole bunches of Sangiovese and Shiraz are pressed together directly to tank and fermented cool to retain the natural freshness and delicacy of the fruit. The blend — 75% Sangiovese, 25% Shiraz — is sourced from the Hollows and Estate vineyards on the Mount Langi Ghiran property, where vines average 25+ years of age. No oak. Minimal intervention. The winemaking exists to preserve what the vineyard delivers. 13% alc. • pH 3.32. Serve well chilled at 8–10°C.
