Bernard Remy Carte Blanche Brut NV is the signature non-vintage cuvée from this family grower-producer in Allemant, on the Côte des Blancs. Founded in 1968 by Bernard Remy and now led by his son Rudy, the estate produces champagne entirely from its own vines — a true grower champagne of consistent character and accessible elegance. Carte Blanche is blended from 60% Pinot Noir, 35% Chardonnay, and 5% Pinot Meunier, aged three years in the estate's cellars before release.

Appearance

Golden colour with lively, intense bubbles and a delicate, persistent foam.

Nose

Light aromas of lime, honey, and lemon, developing with finesse.

Palate

Fresh and mentholated with excellent balance between acidity and sweetness. Delicately fruity with a clean, persistent finish.

Winemaking

Grapes are hand-harvested plot by plot and pressed variety by variety. Fermentation in stainless steel tanks preserves aromatic freshness. Malolactic fermentation follows to reduce acidity while retaining freshness. The cuvée is assembled from multiple harvests with reserve wines ensuring vintage consistency. Bottles are aged sur lattes for three years before gyropalette riddling and disgorgement. Dosed at 8g/l — Brut.

Winery & Vintage Info

The fruit is hand-harvested and pressed gently, with each variety fermented separately in stainless steel tanks. After malolactic fermentation, the wine is blended with reserve wines from previous harvests before spending three years ageing on lees. Following disgorgement, a Brut dosage of 8g/L is added to balance freshness, texture and complexity.

Bernard Remy's vineyards are planted on hillside sites in Allemant on the Côte des Blancs, on the chalky subsoil that defines this subregion of Champagne. The chalk provides three key advantages: optimum sun exposure on the hillside aspect, low soil fertility that concentrates the vine's energy into grape production rather than vegetative growth, and natural water regulation through the chalk's capacity to retain and release moisture gradually. Grapes are hand-harvested exclusively, plot by plot, to ensure each parcel reaches perfect maturity before picking.
