La Chablisienne ‘Pas Si Petit’ Petit Chablis 2023 is a limpid, brilliant pale gold Chablis of genuine citrus freshness and mineral character — citrus notes accompanied by a refreshing hint of vegetables and a mineral touch, with a palate characterised by its tonic and salivating qualities and a satisfying length. Its balance guarantees a promising evolution. Anything but small — as the name suggests.

Appearance

Pale gold, limpid and brilliant — the classic, luminous colour of a Petit Chablis of genuine freshness and the crystalline clarity that Kimmeridgian terroir and stainless steel winemaking deliver.

Aroma

Citrus notes lead a fresh and inviting bouquet, accompanied by a refreshing hint of vegetables and a mineral touch that speaks directly of the Kimmeridgian soil — fossilised oysters and ancient sediment expressing themselves in every glass.

Palate

Tonic and salivating — citrus freshness and mineral character with a satisfying length and the balance that guarantees a promising evolution. A Petit Chablis of genuine finesse and the incomparable crystalline tonality that only Kimmeridgian terroir can deliver.

Pairs With

Fresh oysters, grilled fish, seafood platters, goat’s cheese, and light salads. A mineral, salivating Petit Chablis of this freshness and tonic character is the natural companion for anything from the sea — fitting, given the fossilised oysters in the soil beneath the vines.

Winemaking Notes

Cold settling before fermentation. Alcoholic and malolactic fermentation in stainless steel tanks. Maturation on fine lees in stainless steel tanks — a winemaking approach that preserves the pristine citrus freshness, mineral character, and crystalline tonality of the Kimmeridgian terroir without the interference of oak.

Producer History

The Chablis vineyards are among the oldest in France — cultivated on both banks of the river Serein across seventeen villages, with an exceptional reputation for white wines produced from Chardonnay that has spread to all four corners of the world. The unique character of Chablis originates in its predominantly Kimmeridgian soil — sediment composed of large quantities of fossilised oysters called exogyra virgula, found in only a few places throughout the world, giving the terroir its minerality, finesse, and incomparable crystalline tonality. La Chablisienne is the leading cooperative of the Chablis appellation, producing wines that are the definitive expression of this ancient and exceptional terroir.
