Winemaking Notes

Greywacke Sauvignon Blanc 2025 was harvested largely by machine during cool, often cold night-time conditions over a three-week period commencing 24 March, at high sugar levels from prime vineyard sites across Marlborough’s Southern Valleys and the central Wairau Plains — specifically Woodbourne, Renwick and Rapaura. Fruit was transported directly to the Greywacke winery in the Omaka Valley, lightly pressed to yield a modest volume of high-quality juice, cold-settled and racked prior to fermentation in stainless steel tanks with cultured yeast. All individual vineyard batches were left on lees until late May, when the blend was assembled and bottled in early August. 13.1% alc. pH 3.08. Acidity 6.8g/l. 750ml. Marlborough, New Zealand.

Vintage Conditions

Fruit for Greywacke Sauvignon Blanc 2025 was sourced from several prime vineyard sites across Marlborough’s Southern Valleys and the central Wairau Plains — Woodbourne, Renwick and Rapaura — encompassing a range of soil types from the young alluvial soils of Rapaura and Renwick, rich in New Zealand’s ubiquitous greywacke river stones, to the older and denser clay-loams of the Southern Valleys. Vineyards were trained using two- or three-cane VSP trellis and the divided Scott Henry canopy management system, with fruit picked at high sugar levels to deliver a Sauvignon Blanc of exceptional ripeness, generosity and Marlborough character.
