De Bortoli Prosecco NV is a fruit-driven King Valley sparkling wine of genuine freshness and elegance — green apple, wisteria, and fresh pithy lemon on the nose, with apple and pear on the palate, gentle creaminess, a very fine bead, and a clean, refreshing finish. Gently savoury and beautifully balanced, perfect on its own or with Aperol and soda water for a lively and refreshing spritz. Serve well chilled at 6–8°C and enjoy now whilst fresh and vibrant.

Appearance

Pale straw with green hues and a very fine bead — reflecting the wine’s freshness and the quality of King Valley fruit harvested in the cool of night to achieve the ideal balance of freshness and acidity.

Aroma

Fruit-driven with hints of green apple and wisteria — fresh and inviting, with the aromatic purity and vibrant character that night harvesting and cool stainless steel fermentation preserve in full.

Palate

Apple and pear with fresh pithy lemon — gentle creaminess providing texture and interest, the very fine bead adding elegance and liveliness, and the clean, refreshing finish lingering with fruit and a touch of creamy complexity. Beautiful balance between fruit intensity and refreshing acidity throughout.

Pairs With

Light seafood, fresh oysters, sushi, prosciutto, soft cheeses, antipasti, light appetisers, and summer salads — or simply as the perfect aperitif, well chilled at 6–8°C. Winemaking Notes

Fruit is harvested in the cool of night to achieve a balance of fruit freshness and acidity. The wine is pressed and racked to stainless vats for fermentation before blending, after which the secondary fermentation begins — giving the final bubbles, creaminess, and texture to the blend. The wine is then transferred under pressure, complete with bubbles, to bottle. The secondary fermentation is the step that defines the character of this Prosecco: gentle creaminess, very fine bead, and the refreshing elegance that makes De Bortoli King Valley Prosecco one of the most consistently enjoyable expressions of the style in Australia.

Producer History

De Bortoli is one of Australia’s most celebrated family wine producers, with a history of crafting wines of genuine quality and character across multiple regions and styles. The King Valley is Australia’s natural home for Prosecco — many of its families originated from northern Italy, where Prosecco grapes are indigenous, and the ideal cool climate and breathtaking scenery at the base of Victoria’s snowfields create conditions that mirror the Prosecco heartland of the Veneto. De Bortoli’s commitment to quality King Valley Prosecco production shines through in this non-vintage expression — freshness and gentle creaminess in perfect harmony, vintage after vintage.
