Tasting Notes
Appearance
A beautiful pale gold colour with delicate green highlights. Brilliant, luminous and clear, displaying both youthful vibrancy and mature elegance.
Aroma
The nose is appealing, pure, floral and fresh. It initially favours delicate floral notes, then reveals aromas of peach and apricot. Through lemongrass, minerality emerges alongside a hint of fresh butter, creating a complex and inviting aromatic profile.
Palate
The palate strikes a beautiful balance between maturity, smoothness and vivacity. It first evokes richness, freshness and elegance, then offers an impression of roundness and suppleness. In the finish, mineral and vegetal notes harmonise with the wine's smooth structure, delivering a refined and satisfying conclusion.
Pairs With
Domaine Alain Gautheron Chablis pairs beautifully with cockle soup with baby vegetables, fine oysters with braised endive, scallop salad with raw spinach, crayfish à la diable, trout in Chablis en papillote, salmon tartare with dill, sweetbread casserole with cream, Époisses cheese fondue with Marc de Bourgogne, or simply serve at 10–12°C as an apéritif for pure tasting pleasure.

Winemaking Notes
Vinification follows traditional methods to best express the Chablis appellation and Kimmeridgian terroir. Maturity monitoring determines harvest timing plot by plot, maximising terroir expression based on exposition, vine age (15 to 55 years) and rootstocks. Once harvested, grapes undergo immediate pressing and static settling to retain only the finest juices. Gentle pressing with low-pressure pneumatic presses selects the best juice without crushing or oxidation. Alcoholic fermentation occurs in temperature-controlled tanks at 16–18°C for 3 to 4 weeks, with each plot vinified separately to preserve individual terroir character. Malolactic fermentation follows, stabilising the wines and achieving perfect balance. The wine rests on fine lees for 3 to 8 months, with racking between February and May. Tangential filtration clarifies before bottling, which occurs 9 to 18 months after harvest.
Vintage Conditions
The Domaine Alain Gautheron philosophy centres on producing healthy, honest wines that respect both the drinker and the environment. Vines planted on classic Kimmeridgian limestone soils with north and northeast exposures benefit from optimal conditions for Chardonnay expression. Each vintage reflects unique growing conditions, with careful vineyard management and selective harvesting ensuring optimal ripeness whilst preserving the mineral-driven character that defines great Chablis. The result is a wine built for ageing—3 to 5 years or more depending on vintage—that embodies the pure, elegant style of this renowned Burgundian appellation. Serve at 12–14°C with food to fully appreciate its complexity and structure.
