Winemaking Notes

Vinification follows traditional methods to best express the Chablis appellation and Kimmeridgian terroir. Maturity monitoring determines harvest timing plot by plot, maximising terroir expression based on exposition, vine age (15 to 55 years) and rootstocks. Once harvested, grapes undergo immediate pressing and static settling to retain only the finest juices. Gentle pressing with low-pressure pneumatic presses selects the best juice without crushing or oxidation. Alcoholic fermentation occurs in temperature-controlled tanks at 16–18°C for 3 to 4 weeks, with each plot vinified separately to preserve individual terroir character. Malolactic fermentation follows, stabilising the wines and achieving perfect balance. The wine rests on fine lees for 3 to 8 months, with racking between February and May. Tangential filtration clarifies before bottling, which occurs 9 to 18 months after harvest.
