d’Arenberg Peppermint Paddock Sparkling Chambourcin is one of Australia’s most original sparkling red wines — crafted from Chambourcin grown in a block surrounded by peppermint gums, replanted in 1989 from Shiraz on a site where Shiraz never grew well. Psychedelic purple with a fine persistent bead; spiced plums, dark cherry, and ripe red berries with a luscious, semi-sweet fruitiness that is incredibly enticing. Vibrant, fresh, and super delicious. Drink chilled.

Appearance

Deep crimson-purple with a persistent fine bead — the uniquely vibrant, psychedelic purple colour that Chambourcin’s abundance of colour and the liqueur tirage secondary fermentation produce. One of the most visually distinctive sparkling red wines in Australia.

Aroma

Initially subdued, the wine unfolds to reveal dry notes of liquorice and spiced plum pudding, with enticing small red berries — mulberries and raspberries. With further aeration, bold red fruit characters emerge: maraschino cherry, prune juice, and boysenberry. Rich, concentrated, and layered.

Palate

Cool and refreshing — abundant red fruit flavours intertwined with hints of dried herbs, tarry tannins, and mineral-like acidity. The dry finish is graced with lingering flavours of strong red fruit. Spiced plums, dark cherry, and ripe red berries with a luscious, semi-sweet fruitiness that is incredibly enticing. Delicious now, and with the capacity to bottle age as the fruit and tannins further combine.

Pairs With

Rich spicy dishes including curry with plenty of heat, roasted meats, aged cheeses — or simply on its own, served chilled. The tarry tannins, mineral acidity, and luscious red fruit make this one of the most versatile and joyfully unconventional sparkling red wines at the table.

Winemaking Notes

The base wine is prepared using time-honoured techniques of open fermenting, foot treading, and basket pressing — the addition of liqueur tirage instigates secondary fermentation and creates the bubbles with their uniquely vibrant purple colour. Chambourcin, when picked fully ripe, retains high levels of acidity, an abundance of colour, flavour, and tannin — perfect for a sparkling red wine of this concentration and character.

Producer History

d’Arenberg is one of McLaren Vale’s most celebrated and iconoclastic producers — a family winery with a history stretching back to 1912 and a philosophy of minimal intervention, traditional technique, and uncompromising originality. The Peppermint Paddock takes its name from the block of peppermint gums surrounding the Chambourcin vineyard, replanted in 1989 from Shiraz on a site where Shiraz never thrived. The result is one of Australia’s most distinctive and original sparkling red wines — foot trodden, basket pressed, and finished with a liqueur tirage that produces the psychedelic purple colour and vibrant bead that make this wine unlike anything else in the country.
