The d'Arenberg Peppermint Paddock Sparkling Chambourcin Sparkling Red offers a deep crimson-purple mousse with a persistent fine bead, creating an inviting appearance. Despite initially subdued aromas, the wine unfolds to reveal a rich and concentrated fruit profile. Dry notes of liquorice and spiced plum pudding dominate, along with enticing small red berries such as mulberries and raspberries. With further aeration, bold red fruit characters emerge, including maraschino cherry, prune juice, and boysenberry. On the palate, the wine boasts a cool and refreshing quality, with abundant red fruit flavours intertwined with hints of dried herbs, tarry tannins, and mineral-like acidity. The dry finish is graced with lingering flavours of strong red fruit, making it a true representation of a concentrated and indulgent wine.

Psychedelic purple with a fine persistent bead. Spiced plums, dark cherry, and ripe red berries on the palate with a luscious, semi-sweet fruitiness that is incredibly enticing. Vibrant, fresh, and super delicious. Drink chilled.

The base wine is prepared using the time honoured techniques of open fermenting, foot treading and basket pressing. Addition of liqueur tirage instigates secondary fermentation and creates bubbles with a unique vibrant purple colour.

Surrounded by peppermint gums, the block was replanted in 1989 to Chambourcin from Shiraz which never grew well on that particular site. When the fruit is picked fully ripe it retains high levels of acidity, an abundance of colour, flavour and tannin - perfect for a sparkling red wine.

Delicious drinking now but this wine has the capacity to bottle age, in which the level of richness will increase as the fruit and tannins further combine. If drinking now, it works a treat with anything from a rich spicy dish such as a curry that has plenty of heat, or just on its own. Winery Notes
