Winemaking Notes

This wine is a blend of different parcels of Pinot Noir (56%), Chardonnay (29%) and Pinot Meunier (15%), from cool-climate vineyards in the King Valley and Tumbarumba. All fruit was handpicked and gently whole bunch pressed to minimise contact between the juice and the grape skins and seeds. 100% malolactic fermentation was completed, with secondary fermentation in the bottle. The wine spent three years on yeast lees to add complexity and allow greater merging of aged and yeast autolysis characters. It was then disgorged, liquored, and bottled.

Vintage Conditions

The fruit for this Premium Cuvée was sourced from cool-climate vineyards across the King Valley and Tumbarumba regions, two of Australia's premier sparkling wine-producing areas. These elevated sites benefit from moderate temperatures and extended growing seasons, allowing the classic sparkling wine varieties—Pinot Noir, Chardonnay, and Pinot Meunier—to develop complex aromatics whilst retaining the crisp natural acidity essential to fine sparkling wine production. The cool-climate influence ensures optimal balance between fruit intensity and refreshing elegance, whilst the extended three-year lees ageing has developed the wine's creamy texture and sophisticated character.
