Winemaking Notes

The fruit for the 2025 Tar & Roses Pinot Grigio was sourced from four main vineyards across Victoria: one in the King Valley, one in Sutton Grange, the Stratford Vineyard just north of Nagambie, and the Mitchelton vineyard. The higher altitude of the King Valley and Sutton Grange vineyards provide cooler conditions, allowing the grapes to ripen slowly—ideal for the development of the delicious classic fresh peach and pear flavours—whilst the warmer regions bring out the more tropical aromas of the flavour spectrum. The grapes were machine harvested, crushed, and pressed through an air bag press in the protective presence of SO₂. Cold tank fermentation was undertaken at between 10 to 15 degrees Celsius, preserving the wine's bright natural acidity and delicate aromatics. Where possible, the pressings and free run were fermented separately before being blended back with the free run for stabilisation prior to bottling, creating the rich, viscous texture that defines this elegant expression.

Vintage Conditions

The 2025 vintage in Victoria provided excellent conditions for Pinot Grigio production, with the diverse vineyard sites across the King Valley, Sutton Grange, Nagambie, and Mitchelton regions each contributing unique characteristics to the final blend. The cooler, higher-altitude sites benefited from moderate temperatures and extended ripening periods, allowing the development of intense nashi pear, white stone fruit, and mandarin flavours whilst maintaining the bright natural acidity that defines this wine's elegant structure. The warmer regions contributed tropical nuances and honeydew melon notes that dance around the edges of the flavour profile.
